Chicken Kebabs Recipe

Ignore me over here...I'm pretending it's summer time and the weather is warm. I'm also pretending it's grilling season with lots and lots of fresh veggies and yummy chicken. Who am I kidding? I woke up this morning with snow on the ground! Anyway, last night I was craving grilled veggies with some meat. I love to make kebabs because they are healthy and filling. They are a little time consuming, but they're so fun to make with another person! I had squash, zucchini, roasted red peppers, red onions, turkey kielbasa sausage, and grilled chicken breasts to use. I marinated the squash, zucchini, onions, and peppers together in a Ziploc bag with olive oil, kosher salt, black pepper, minced garlic, and onion salt. I coated everything real good and then added the chicken to another Ziploc bag and repeated the steps. Finally, because the turkey sausage was already cooked and seasoned, I just added it to the kebab stick when I was ready to put them in the griller. Some people asked me on Instagram last night if I grilled them outside, but I didn't! Sam and I have this awesome toaster in our kitchen where we can toast, grill, bake, roast, and heat. It's phenomenal! It makes life so much easier in the winter when we want something with a grill flavor.

 I also cooked a side of asparagus and had some leftover 
pasta salad from Fresh Market, so I can't take credit
 for the pasta. ( If you've never had Fresh Market's 
pasta salad, you need to get some pronto. )
 P.S. Sam said," This is the best asparagus you 
have ever made!" Funny story is that
 I hardly put anything on it.. I just coated it with a little
 olive oil and kosher salt. Asparagus doesn't need 
a lot of seasoning and marinating...

This looks soooo amazing! I swear I live off kabobs in the summer. I may have to make this next week!

That looks delicious and we still grill outside (when it's not in the negative temps)!

We have such a good smoke detector that we have to cook any meat outside if we're not baking it. Annoying!

YUM! I can't wait for spring when we can grill outside without freezing. Kabobs are some of my favorite, easy meals.
