Paleo Beef Fajitas Recipe

It stinks not being able to do my hardcore workouts, so because of that, I have been eating extremely careful. Last night, I had some organic beef to use up, so I thought originally I wanted to make a stir fry, but turns out I made beef fajitas paleo style. Of course Sam didn't have it paleo style, but I did and it was delicious! I didn't miss the rice or tortillas at all! I sauteed the meat in a skillet with a little olive oil first. I browned it real good and then threw the sliced onions, green onions, mushrooms, and a bag of three pepper and onion blend. Sam hates green peppers, but I knew he could just pick around those. I sauteed it all together with some olive oil, garlic, salt, black pepper, and a little paprika. Last, I put some on my plate and topped it with a little homemade guacamole and salsa. It was extremely good! Sam had beef fajitas and a bag of Mexican rice, so if you're not following a paleo diet, you can make tacos, too! :) He loved it! Super simple and my entire dinner was 450 calories with lots and lots of protein!

That looks so good!! I lost 4 pounds last week. I am so motivated! I'm going to treat myself to a pair of those lululemon shorts when I lose 10 more. :-)
