Chicken Parmesan Meatballs

This Chicken Parmesan meatball recipe was a huge hit at my house! I made these last week and could not be more happy with them. They are easy, require one mixing bowl, and the cooking time is nothing! The best part: they are HEALTHY!

I let them soak up juices while I was at work. When I came home,
I placed them on a baking sheet. 

I then topped them with a little spaghetti sauce. 

I pulled them out to top with a little mozzarella
and stuck them back in the oven long enough
to melt the cheese and warm the sauce. 
I then served with a side of asparagus and roasted
tomatoes. Happy Cooking!

Thank you so much for this recipe! I made it for my boyfriend for Valentines as an appetizer and they came out delicious! I did leave out the fennel seeds because I'm not a fan and I used Italian breadcrumbs but they came out sooooo good! Thanks again! I will have to try some more of your recipes!
