Weekend Recap

I hope you all had a wonderful weekend! Mine was very low key, but fun! After the busy week I had last week, I needed some R&R!
 
 
Friday afternoon, after I got home from school, I went for a run downtown. I love running downtown and don't know why I don't run down there more. Anyway, I headed north on Main street for about two miles.....As I hit mile and a 1/2, I looked down at my GPS and noticed I ran the first mile in 8:52! Holy smokes! I have never in my life done that! I was booking it. At mile 2, I had ran a 9:14, and at mile 3 a 9:27.... I was feeling good, so I kept on going. My usual 5k's range anywhere from 34 minutes to 38 minutes....Yes, I'm slow, but I'm also a fairly new runner, so I'm happy to be under 40 minutes considering where I USED to be! ha! I remember my very first 5k was 42:19..SLOOWWWWW AS CHRISTMAS! Anyway, I finished 3.2 miles in 29 minutes and something. I can't remember my exact time, but I think I was so pumped about my time, I got my second wind. I turned around and headed south for three more miles....Come to find out, I finished 5 miles in 50:27...It was a HUGE milestone for me! I went for a run again this past Sunday morning, and although I didn't keep the same pace, I kept my pace around a 10:30. I ended up running around 7 miles that morning.... I have officially gotten the running bug... I can't wait to sign up for a 10k...I would love to sign up for several before my triathlon in May.. :) Any suggestions on how to improve my time? I hear treadmill sprinting is good?? 
 
 
 
Friday evening, I had a dinner party! I made eggplant parmesan for everyone. I used the Whole Foods recipe. It turned out AMAZING! I will definitely be saving this recipe for future use. I'm also sad to say that I forgot to get a picture of the eggplant before we ate it! :(  Here is the .recipe......



 
 
 
Saturday, S and I stayed home all day and watched football. It was nice to sit at home and relax. That evening, we headed to dinner at Outback, grabbed some movies from Redbox, and enjoyed our Saturday evening on the couch. If you have not seen World War X, I highly suggest it!!!
 
Sunday, I got up for another run and did some weights in the gym. Sam and I went to brunch at our favorite spot, Local. We ran a few errands around town before heading to my parents for my dad's birthday lunch. After, we headed back to Memphis to watch the Broncos game! We had a killer win, by the way! :) All in all, it was a great weekend!!! :)
