Egg White Frittata



I made an egg white frittata the other night. It was so good! I haven't made one in years, but was craving breakfast food last night, so I thought...why not?? You can really put ANYTHING in them that you want, but I wanted lots  and lots of vegetables and a hint of turkey bacon. Here is what I added in  mine: turkey bacon ( 3 slices ), cherry tomatoes, red onion, jalepeno slices, green onion, zucchini, mozzarella cheese, and parmesan cheese. You can also make them with real eggs, but all I had was egg whites, so it worked just fine... I cooked the turkey bacon and onions on high first with a little olive oil to sauteed them..I then threw the rest of the veggies in there to soften them up some and added some different seasoning. I like cayenne pepper, so I added a little, too. Next, I add 3/4 cup of egg whites on top of all the vegetables and bacon. Make sure the vegetables and meat are completely covered with the egg whites. Next, I threw the two kinds of cheese on top and let it sit for about 2 minutes. Make sure it stays on the stove until the edges start rising...After the two minutes were up, I took the skillet off the stove and  stuck it straight into the oven for about 15minutes...Serve hot. It was so yummy! I served it with a side of mixed veggies I had mixed up.

Florida Recap..

I apologize for the lack of posts lately! We were in Florida all week, so I was exhausted when we got home! I won't waste a lot of time typing because I want to share my fun photos with you, but we had a WONDERFUL TIME! It was probably one of the best trips we have ever gone on! We loved the place we stayed, etc. It was a wonderful Spring Break...I wish it wasn't over... :(

We got there Saturday night and this was our view

from our condo...Bliss is all I can say...It was wonderful.

We sat outside for a while and enjoyed some wine before

going to dinner. We had a wonderful restaurant downstairs

in our resort, so we just had dinner there that night. We

were tired from all the driving.

This is our other balcony view. We get a view of the

ocen AND the city? What more could you ask for?! :)

 

I enjoyed a yummy, healthy breakfast on the patio

before taking off for the beach each morning. It

was my "quiet" time while S still slept.

 

The next morning, I was up and out the door!

I did a lot of this..Lounging and sun bathing. ha!

This is my new cover up from VS. I loved it!

 

PERFECT weather on Sunday!! I loved it!

 

I got a nice tan while we were down there!

We came in around 4:00 and put our green

beads on for ST. Patty's Day! We enjoyed

a cocktail at the bar downstairs before going upstairs

to get ready for dinner and the evening.

 

This was after dinner at AJ's. ha! I will

do another post on my outfits while we were down there.

 

One night at dinner. I can't remember what

night this was. I think the night we ate at

Harbor Docks.

This is one of our last nights there. We went to dinner

and then to Harbor Docks to listen to a band on the patio.

IT WAS PERFECT WEATHER!

 

 

All in all, it was a perfect week with my boy.

Thursday Obsessions...

I am loving everything from Gap right now. I just can't stay off their website! I ventured on there this morning and they're having a 30% off promo code right now....Grrrrrreat....Here is what's "hanging out" in my shopping cart...

Randomness Wednesday...

I hope you all are having a great week so far! We are gearing up to leave on Saturday! I cannot wait! The weather is supposed to be perfect, woohoo! Anyway, I wanted to share a few things with you on this "hump" day. I don't have much, but I have a little something for ya'! :)

My tote bag finally arrived!! I love it! I cannot wait to use it!!!

I also cannot get over the tough feeling of this bag. I definitely

see it holding up very well on the beach.

 

This beauty arrived in the mail on Monday.

Concidence? I think not. We get these

things in the mail all the time,

but never get to use them because

we don't have a Ralph Lauren outlet near us..

But guess what??? There is one

in Desssstinnnn.....I showed S this last night

and he said, " Oh, geez..We're in trouble.."

He loves that store just as much

as I do! ha! :)

Safe Haven Review...

 

I just finished Safe Haven. I loved it! I have not seen the movie yet, but I plan to sometime this week. We are leaving for the beach early Saturday morning, so maybe we'll go Friday night! :) I highly suggest this book. It's an easy read, but has quite a bit of depth, too. There's an awesome twist at the end. Read it!! You won't regret it... ;) 

Dinner Menu for the Week...

Monday Night:

Tuesday Night:

BLT sandwiches made with turkey

bacon, whole grain bread, and

of course... lettuce and tomato.

I am also going to fix some

sweet potato fries..

 

 

 

Wednesday Night:

Kendall Bollen's Coconut shrimp recipe with

home made mango sauce! I can't wait to try this!

 

 

 

Thursday Night:

Turkey burgers! Of course..I am going to fix mine

without a bun because I am trying to lower the

amount of carbs I am consuming.. I am also

going to fix a side of brussel sprouts with this.

 

 

 

Friday Night:

Ground turkey stroganoff!

 

 

I am hoping this will help me stay on task as far as grocery shopping.

I won't spend as much!! HA! :)

 

 

 

Weekend Recap..

I hope you all had a wonderful weekend! Mine was relaxing...I didn't have much going on. When I got home on Friday, I was exhausted. We both decided to stay home. We ordered a pizza, opened a bottle of wine, and relaxed. We cheered on our Grizzlies and enjoyed laying on the couch. I also finished Safe Haven! I loved it! I can't wait to see the movie!

Saturday morning, Sam went to the office to work for

a while, so I headed to my parents house to watch the

Tigers game. Luckily, we won, but it was questionable

in the beginning... After hanging out with them for a couple

of hours, I headed to Collierville to return some things

to Gap that I had ordered online. It never fails....

Anytime I go to the store to return something,

I come out with 15 more things...Figures...I left with some

fun new spring tops, coral skinnies, and an adorable pair of

mint broken in khakis...Yes, I just ordered a pair of jeans

in a mint color, but I can't have too many! Right?? ;)

 

( First off: Please excuse the clothes hanging on the banister.

I was in the middle of doing laundry,

so I had clothes everywhere. ha! )

 Anyway, I stopped by Target on my way home because

S was still working. I browsed for awhile and came

across this adorable bangle set. I bought it to wear with my

MK gold watch. I wore it last night to dinner and LOVE it.

I can't wait to wear it in Florida..

Saturday night, S and I went to dinner at

Automatic Slims around the corner

from us.. We both didn't feel like doing anything after dinner,

so we came home and relaxed before going to bed around 10:00.

 

 

 

Sunday morning, we got up and watched SNL

that we DVR'ed. I never stay up late enough to

watch it, ha! First of all, S and I LOVE JT.

It's not just because he's from the Memphis area,

but because he's a great entertainer! I couldn't

pick a better person to represent Memphis.

Anyway, at the end of SNL, JT came out

with a Memphis hat and t-shirt on. I thought

it was amazing!! I am so glad to see that he

still claims his hometown and is proud to represent.

MEMPHIS LOVES YOU JT!!!

 

 

 

Sunday afternoon, I caught up on laundry and

got everything ready for the week. I like spending

Sunday at home, so I can get myself organized.

Sunday evening, I made panko encrusted

scallops, summer corn, and asparagus. It was

yummy and healthy! We also watched a couple

of movies on Netflix....

 

 

All in all, it was a great weekend!

I can't wait to be in Florida this time next week! :)

In the movie based on my life...I don't know a movie off the top of my head, but I have always said my life could be a lifetime movie... ;) If I had to pick someone to play my part it would definitely be Emma Stone, LOVE HER. Sam would be Bradley Cooper or Christian Bale..His personality is a lot like both and they are bot HOT. ;)

3. Typically, I end up regretting....the amount of calories I consume over the weekend. From wine...Oops

4. I always ask to leave off the....olives...YUCK! Or I always ask for the dressing on the side.

5. Kim and Kanye really...need to fall off the planet...Oops...Did I say that out loud??  

6. My Parents always reminded me...what true love really is...They were MEANT for eachother.  

7. Every single day I.....realize how much God has blessed me with a wonderful life and family.

8. This one time in College... My girlfriends and I were having too much fun, so I forgot I left my purse in the Sigma Chi's bathroom with over 3,000 dollars in it..My Mom had just given me all the money earlier in the day for my books and rent...Oops....Luckily, one of my best guy friends picked it up and kept it for the night... Thank goodness for good friends.  :)

9. My grossest habit is...biting my finger nails...I try to keep gel on them, so I won't do that.

10. My latest white lie was...Ha! I'll nevvvvvvver telllll...... ;)

11. I know all the words to..."I like Big Butts and I Cannot Lie.."" Whatttttttt?!! Are you REALLY that surprised? ;)

12. When I grow up...I want to be the best wife and mom I can be.

13. Sexy time is...huh?? What a weird question...I guess date night???

14. I will never, ever... like the McDonald's commercial about their fish bites! It drives me insane!!!! Sam will download it from YouTube to mess with me....grrrrrr

15. I think it's hilarious... When my family gets together... We can't stop laughing...

What You Don't Know..

1. I have a twin brother. He is 1 minute older than me....

2. I have a skin condition, like excezma,  that covers the majority of my body. It is usually not noticeable unless I have a flare up, but my skin is SENSITIVE to EVERYTHING.

3. My mom is a fourth grade teacher, I am a fourth grade teacher, and my closest first cousin is a fourth grade teacher... It runs in the family ;)

4. My boyfriend is 12 years older than me...
I love every minute of it.

5. You will never see me in the morning without my coffee.
I am a HUGE  coffee drinker. I drink it black.

6. I cannot do a cart wheel... Seriously!
I have never been able to do one.

7. I always hated being tall, but now I somewhat embrace it.
I can gain 5 pounds and it's not that noticeable... ;) --I'm 5'11.--

8. I love Justin Bieber. I jam out to him when I'm driving!

9. I am not a sweet eater. I will occasionally want something
sweet, but it's not very often. You will rarely see me
eating brownies, ice cream, cake, etc.

10. My favorite food is nachos. Any kind of nachos!
BBQ, Southwest, Fajita, etc. Of course I have to
exercise if I am going to consume THAT many calories!

11. I am hot natured. I cannot STAND to be hot! I
would rather be cold and add clothes than sweat. It's miserable
to me. I don't mind sweating at the gym, but DEFINITELY
not when I'm all dressed up going somewhere.

12. I am not a jewelry person. I would rather spend
money on handbags and shoes....

13. I LOVE to cook! I am sure some of you can tell from
my blog posts...

14. I wear too much eye makeup...I can't help it.

15. My favorite pair of shoes are my cowboy boots..

Beach Necessities.

I know I have been talking about the beach a lot lately, but I wanted to share with you a few things I ordered to take with me on this "fun in the sun" trip! :) Also, I am down 11.5 pounds! Woohoo! 

 

 

Victoria Secret had some adorable swimsuit cover ups, so I had

to take part in it! ;) They are having a sale right now where

you spend a certain amount, you get money off. I ended up

getting $75.00 off my total purchase!

I got this adorable leopard caftan cover.

I also got this awesome striped one.

It's real nautical to me. :)

 

                                                 I also ordered some off the shoulder

sweaters to wear, because it's not going

to be real warm in the evening. These will

be great with shorts, pants, or jeans. I got

one in black/white stripe and also ordered

the pink/white stripe one below.

 

I love rompers! They are so comfortable to wear.

I could probably wear this as a swimsuit cover up, too,

but I bought to wear during the day, at night with

a cute jacket over it, etc. I didn't order this color,

but I just ordered a plain black one. I plan to

pair it with some chunky turquoise jewelry! :)

 



 

 

 

 



I also need a new tote bag, so I ordered the

extra large Boat and Tote from LL Bean

in this eggplant color! I also got my initials

monogrammed on it! I can't wait to use it!! :)
