Recent Purchases...

I have not wanted to buy many clothes lately. I know that sounds strange, but it's simply because I have been dieting and losing weight throughout this whole process, so I don't want to buy a lot and then turn around and nothing fit....I havvvvveee purchased a few things, though.... ;) 

I love this J.Crew denim military vest! I used to have
one when I was a little girl. ha! I know this will
probably not be in next winter, but I couldn't
help myself. It will be adorable with some Maxi
skirts transitiong into Spring.

I finally took the plunge and purchased the
Tory Burch avaitors that I have been eyeing.
I wanted them for awhile, plus I had a gift card,
so I went ahead and bought them! I love the case
they come in! So cute!
 

I ordered these adorable booties off Macy's last week,
but I am still not sure how I feel about them. They are
not very comfortable and the inside of the booties
look extremely cheap. I have a feeling that I am
going to be returning these... Oh well.

Weekend Recap..

I hope you all had a wonderful weekend! Ours was fun and very laid back. Friday night, S and I went to Majestic Grille for dinner. We had another birthday dinner, ha! I am always tired on Friday nights, so we came home and enjoyed the evening on the couch. We watched the game, Sam hung our new track lights, and I graded papers. WILD Friday night, let me tell you! ha! Saturday morning I got up and headed to the gym for an early morning workout! I knew we would be partaking in a "fun" day of hanging out with friends, so I wanted to get in a good exercise! I ended up burning 800 calories! It kicked my boo-tay. After coming home and getting dressed, we headed to the Tigers game! It was a fun game! Afterwards, we headed to Beale to enjoy some lunch and a couple cocktails. We ended the evening out in the 'burbs at our best friend's house. On Sunday, we had lunch at Central BBQ downtown with my family, ran a few errands, and came home to end the weekend watching the Grizzlies play! :) Over-all, it was a great weekend with great weather! I am already looking forward to the longer days we are starting to have...Hope you all had a great weekend! Back to the grind tomorrow!!

Cilantro Shrimp and Mixed Veggies

I fixed Skinnytaste's Cilantro Shrimp the other night. Sam has been working late for the past two weeks, so I have been solo a lot for dinner. Of course he always eats when he comes home, but I just can't wait to eat until 8:00 in the evening. I'm usually a 5:30 eater when I cook. I like to cook, eat, clean the kitchen up, and be on the couch by 7:00...I have more of an evening to enjoy that way. Anyway, I have been using a lot of her recipes to prepare dinners. Now that I am teaching, I want something that tastes good, but isn't too hard to prepare. I also want something healthy...If you have not checked out Skinny Taste's website, I HIGHLY suggest you do. I changed the recipe up a little to suit us, but it all turned out great! I added Uncle Ben's whole grain brown rice underneath the shrimp, and needed to get rid of some mushrooms and asparagus, so I added that in as well. I even had enough for lunch the next day! The shrimp was ten times better because all the juices had soaked in...Yum Yum... Definitely check out this recipe. It's on Skinnytaste's website or you can find it on Pinterest. Cilantro Lime Shrimp & Green Beans
Servings: 4 • Serving Size: 6 oz shrimp & 1-1/2 cups green beans
Calories: 257.3 • Fat: 5.1g Protein: 35.9 g Carb: 17.4 g Fiber: 4.1 g

Ingredients:
  • 2 tsp olive oil
  • 2 lb shrimp, shelled and deviened
  • 6 cloves garlic, crushed
  • 1/3 cup chopped fresh cilantro
  • 1 lime
  • salt and pepper
  • 6 cups green beans

Directions:

Heat a large frying pan on medium-high heat. Add oil to the pan, when hot add shrimp. Season with salt and pepper. When the shrimp is cooked on one side, about 2 minutes, turn over and add garlic. Saute another minute or two until shrimp is cooked, careful not to overcook. Remove from heat. Squeeze lime all over shrimp and toss with cilantro. Serve hot.

In a separate pan, add 6 cups green beans, crushed garlic to taste, and season with salt and pepper. Cook on medium high for 2 minutes. Add 1/2 cup water and cover, cook for an additional 8 minutes. Uncover and cook until water evaporates. Serve hot on the side of shrimp.

Inspired Pinterest Styles and Birthday Celebrations.

I have decided to start putting my Pinterest "pins" to good use. I will start copying/dressing like some of these awesome stylists each week, so it "spruces" up my wardrobe personality. I get tired of the same ole' outfit every week. I am a school teacher, so sometimes it is kind of hard to step outside the box because of dress code, but my school is pretty laid back, so I will copy as much as I can! :) Here are my inspirations for the week:

Buffalo Turkey Burgers

Yesterday was a yucky day, so I decided to stay in once I got home from the gym. I did a lot of cleaning up, organizing, etc. It rained ALL day yesterday, so it was even more of a reason to stay in. S had to work late last night, so I decided to do a little cooking and relax. I am anxiously ready to move and get out of this condo, but until then, I am thankful to have a roof over my head. Anyway, I have recently found my obsession/love for Gina's Skinny Taste. She has wonderful recipes!  I have been on a ground turkey kick lately. I'm not sure why, but I love turkey burgers, turkey meatballs, meatloaf, etc. Last night, I set out some ground turkey, squash, zucchini, and brussels sprouts for dinner. I ended up making Buffalo Turkey burgers, zucchini and squash parmesan crisps, and sauteed brussels sprouts with piccata. It was all delicious! It even made enough for three extra turkey burgers, so I have leftovers now!

Life Lately..

I hope you all are enjoying your day off!! I have had a pretty good day so far. I headed to the gym early this morning, so I can spend the rest of my day at home. The weather in Memphis is terrible today, so I will be washing clothes, grading papers, making a grocery list, finishing up season four of Melrose Place, and relaxing! :) I have been training with my trainer for almost a month now, but I am loving every minute of it! I already feel like a new person. I am down 7 pounds in three weeks, so I am anxious to see if I lose anymore this week before we hit a month! I have been changing my eating habits a lot, too. I eat more, but my meals are smaller. I am never hungry! It's really nice. I also am not drinking any alcohol anymore...I know...I will usually pick one weekend out of the month to enjoy myself, but I have just not felt like it....I would rather get up in the morning and go for a run, go to the gym, etc. Speaking of exercise and eating healthy, I finally bought myself a Polar FT4. I am OBSESSED with it.. I love,love,love it! It was hard for me to keep up with how many calories I was burning while working out with my trainer because we used weights,etc. I get motivated to increase my time every workout! :)
 
 
 
Sam's birthday is Wednesday. We went out of town this past weekend, so my Mom and Dad had everyone over last night to grill steaks and celebrate! It was a fun night! We still are not sure if we are going to dinner Wednesday night or wait and celebrate this weekend with friends. We are going to a Tigers game on Saturday with our best friends, so we might just turn it in to an all day event. :)
