Day 17: Something You're Looking Forward To

Sorry I have been MIA this week! It has been a super, uper, busy week! Thursday night, Sam and I celebrated our ONE YEAR anniversary :) We had a special evening! I didn't feel too well the next day, but it was all worth it! ( Flight's champagne is the bomb.com ) Last night, we went to TSO concert and dinner with my family. It was awesome as usual, but that kind of explains why I have not had a  chance to blog this week :) Hope you all are enjoying your weekend and Christmas parties!!!
Today's DAY 17: Something You're Looking Forward To....Well, I have thought and thought about this one. I am looking forward to A LOT of things, but the biggest one is graduating with my Bachelors in Early Childhood Education. I CANNOT wait to start teaching. I am finally at the stage where I am SICK OF SCHOOL AND READY TO BE OUT, OUT, OUT!!!! ha! I'm sure I won't like getting up everyday of the week and having to go to work, but I will enjoy when my paychecks finally have commas ;) Granted, I am thankful for everything that my Lord brings into my life, but I will be one HAPPPY girl when that day comes. I have about a year left, so I am counting months! :)

Day 16: Dream House

I have always loved driving and looking at homes throughout Memphis. As time has gone by, my taste has changed drastically. I used to love the new, brick, dark colors, and bold prints, but now I am the complete opposite. I love older homes that have been updated, but still have the old, vintage feel to them. I love white brick, mint green's and white decor/bedding, and anything antique. My boyfriend's condo is for sale and we're PATIENTLY waiting for someone to buy it, but I cannot help myself as I stroll the internet getting ideas for his "future home." I have pretty much already decided what I will do with the master room, den, and dining room...haha! I love decorating and everything about it. It is all too much fun to me! Bascially, I cannot show you a picture or draw what my dream home would be or look like, but I can include a few pictures of how I picture it looking someday! :) Enjoy!

I plan to use white pieces with a touch of yellow or green for accent.

I absoutely love the white bedding and the

upholstered headboard, a definite must.

I love that they used greens as an accent color

DAY 15: A Bible Verse

I love Bible versus, because they are so touching and always put me in a good mood! I have always loved posting them on a sheet of paper and leaving it in my car, near my bed, or in the bathroom, so I can always remember how important Jesus Christ is to all of us and we should all live better lives ;) I wont go sappy or preach to you, but i will share my all-time favorite bible verse with you...

The Lord is my rock and my salvation, he is my fortress and I shall not be shaken. Psalms 62:2

Christmas Parties Galore!

I have been to Christmas parties galore over the past few weekends! I feel like I need the week to start, so I can catch up on sleep! ha! We have had fun, and I have taken lots and lots of pictures, so I wanted to share with you! Enjoy! Are you guys going to Christmas parties??

Day 14: A Picture You Love

Hey, guys! First of all, I would like to say I AM DONE WITH FINALS AND SCHOOL FOR THE YEAR!!!! YAYYY! I finally feel like I have my life back..I plan to keep the blog up and running all through the Christmas break and keep you up to date with all my "exciting plans." ha! ( yeah right...) Hope everyone is doing well! Day 14 is about "a picture you love." I love taking pictures, so choosing just one was hard, but I think I came up with the right one ;)

This picture means so much to me and more. This was the very first picture Sam and I took together right after we started dating. I love it, because it brings back so many wonderful memories from last Christmas. Our realtionship has only grown and gotten stronger since then and I  cannot wait to see what happens in the future! He is my very bestfriend and I love him more than anything in this world! :)

Day 13: Your Goals

My Goals...
I could list and list for hours about all the goals I want to accomplish over the next few years, but I won't bore you to tears, so I'll just list the MAIN ideas..;)

1. Become a successful, respected, School Teacher.
2. Be a wonderful wife and mother someday.
3. Become an exceptional cook....I'm practicing ;)
4. Get back in to working out and running in the year of 2011.
5. Learn to not say everything that I am thinking...
6. Quit being so moody and taking all of my "crazy issues" out on everyone else.
7. Learn that it's okay to not be so independent....
8. Quit procrastinating...
9.  Learn to not sweat the small things.
10.  Be more affectionate...

Instead of me just rambling on & on about what I believe in, I'll just do a list! It will be much easier ;) Enjoy!

Mexican Chicken for Chicken Thursday!

Every Thursday night at my house is CHICKEN THURSDAY! I cook for the parents, brother, boyfriend, and awesome cousin! I love, love cooking for everyone and hosting things. Hopefully one day when I have my own house, married, etc. Sam will let me have dinner parties ;) I'd LOVE it! We always cook some type of chicken dish. I have made a few different things the past few weeks, but tonight I made Mexican Chicken. It was awesome! I COULD have gone easy on the onions, but over-all it was pretty great. I fixed a side of corn and mexican rice to go with it! :) It is a very, very easy recipe! If you are in a hurry and need a quick casserole, I highly suggest!!! Hope you enjoy!!!

MEXICAN CHICKEN CASSEROLE
1 pkg boneless skinless chicken breast

1/2-1 whole bag of nacho flavored Doritos

1 can Rotel

1 can Cream of Mushroom soup

1 can Cream of Chicken soup

1/2 block Velveeta cheese

1 bag of Kraft cheddar cheese

1 small can sliced black olives



Wash and cut fat from chicken breast. Then place in a pot and boil on stove until chicken is an opaque white and tender.

In a large casserole dish, spray the bottom with butter cooking spray.



While chicken is cooking, mix Rotel, soups and olives; set aside.



When chicken is done, allow to cool in strainer then pull apart and shred it into the bottom of dish. Spread mixture on top of chicken evenly.



Thinly slice Velveeta and place on top of mixture. Crush chips and sprinkle over mixture and cheese. Top with cheddar cheese.
Bake at 350°F for 20-30 minutes or until heated thoroughly.

I don't watch much television, but when I get caught on something, I am HOOKED. Here is a list of a few of my favorites. ( In no special order )

There's a few more that I watch every now and then, but this is the majority! :)
