Day Nine: Something that You are Afraid Of




I have always been a "chicken" or "wuss" as my boyfriend and parents like to call it, because I am scared of just about everything. I hate bugs, rats, the dark, and the list goes on and on....As a little girl,  I have always been afraid of heights, but I have always wanted to overcome that fear so, I did! I am not nearrrrrrr as afraid of heights as I used to be. I actually like getting on rides, climbing Sam's deer stand, flying, etc. One thing that I have never been able to get over is drowning. Drowning is my WORST fear in the entire world! I have always been scared that I would get sucked under the pool, lake, or ocean and not be able to come back up...( ha..i am a bit of a freak and paranoid human being.) So, I guess I can say...the BIGGEST fear of mine is drowning...I cringe at the thought of it! :(

Day Nine: A Picture of Your Friends

My friends mean everything to me! I have to say I am pretty blessed when it comes to the girlfriends God has chosen for me! They areeee wonderful. I have learned that the older I get, the smaller your group of friends get, but the closer your friendship and connection will be with the ones that stay through years and years to come. I am beyond blessed. I count my blessings everyday for it. :)

Homemade Potato Soup

I "tweeted" yesterday about making Homemade Potato soup from the Cooking Light magazine. I found it in this month's magazine and was super excited! Sam and I LOVE Potato soup! I thought the recipe was pretty easy to follow, so I went to Miss Cordelia's last night, bought the ingredients, and the soup was made in 20 MINS! Super, Super, Easy! I'll include a picture of how it turned out and the recipe. :) Happy Fall!





Ingredients


4 baking potatoes (about 2 1/2 pounds)

2/3 cup all-purpose flour (about 3 ounces)

6 cups 2% reduced-fat milk

1 cup (4 ounces) reduced-fat shredded extrasharp cheddar cheese, divided

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup reduced-fat sour cream

3/4 cup chopped green onions, divided

6 bacon slices, cooked and crumbled

Cracked black pepper (optional)
 
 
Preparation


Preheat oven to 400°.
Pierce potatoes with a fork; bake at 400° for 1 hour or until tender. Cool. Peel potatoes; coarsely mash.
Lightly spoon flour into dry measuring cups; level with a knife. Place flour in a large Dutch oven; gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, 3/4 cup cheese, salt, and 1/2 teaspoon pepper, stirring until cheese melts. Remove from heat.

Stir in sour cream and 1/2 cup onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Ladle 1 1/2 cups soup into each of 8 bowls. Sprinkle each serving with 1 1/2 teaspoons cheese, 1 1/2 teaspoons onions, and about 1 tablespoon bacon. Garnish with cracked pepper, if desired.
Yield: 8 servings (serving size: about 1 1/2 cups soup, 1 1/2 teaspoons cheese, 1 1/2 teaspoons onions, and about 1 tablespoon bacon)

The soup originally used fat-free sour cream, which I felt gave it a too-tart taste. After tweaking a few ingredients, the recipe now calls for reduced-fat sour cream, and we all are much happier with the results." --Recipe by Ann Taylor Pittman (October 2002)

Day Eight: A Place You Have Traveled To

When I first read "Day 8" I was excited, because traveling is SO important to me! I have been a TON of places, and have so many more on my list to visit! I have traveled to: Florida, New Mexico, Las Vegas, Califronia, Colorado, Mexico, the Carolinas, Virginia, and the list goes on! ha! I went to Las Vegas this past Feb with S for his birthday and we had a WONDERFUL time! We stayed at the Bellagio and LOVED it! If we ever go back to LV, I will never stay anywhere else! We saw "O," Blue Man Group, and did LOTS of shopping! The dining was fabulous, but veryyyyyy expensive! I also visited the spa in our hotel, which was also amazing. I took lots of pictures from the trip:

My Vintage, Silver Christmas Tree!!

I blogged yesterday about the "type" of Christmas tree I wanted to put in the condo downtown. I not only found the EXACT tree we wanted, but I found ornaments, topper, star, garlen, etc!!! I was MORE than excited!! It took me awhile to get the tree up, fluffed, and decorated, but I am SO glad I spent so much time on it, because it looks wonderful! I am currently on the hunt for a Vintage tree skirt, so if you all know of anywhere I can find one, let me know! :) Here are a few pictures of how the tree turned out! :)

Perfect Christmas Tree...

Hope you all had a wonderful weekend! I spent MOST of my weekend putting up trees at my parents house! My Mom has a traditional homemade ornaments tree, gingerbread tree, and "gold and red" Christmas tree. I also put up a "girly and fun" White tree in my bedroom! We worked on them all day! I slept for a total of 13 hours that night! I was definitely worn out! Although....I would love to be done with the decorating part, but I have one more tree to put up! S lives in Downtown Memphis, so his ceilings are super tall & the room is real open and bright. I think we both have decided on a skinny and really tall tree! I have been going back and forth between a typical red and gold tree, nature tree, or doing my "all time favorite" VINTAGE TREE! I love all the silver ornaments! So, so, pretty!  I got on Pottery Barn this morning and fell in love. They had so many ornaments for the tree, centerpieces, and ideas for a Vintage Holiday home! I was in HEAVEN! We WILL be making a trip to Pottery Barn this afternoon :) Hope you all are getting in the Holiday mood! I DEFINITELY am now! :)
